Cooking by Campfire

Camp food gets a bad name. But it doesn't have to be that way.
Cooking by campfire can be challenging and even a bit daunting. However, I learned of these amazing hobo packs when I was in college camping with some friends.
Hubby caught me breaking up carrots and cutting the rest of the veggies.
This was all I brought (I forgot the garlic...our family lives on garlic).
olive oil, minced onion, sea salt and black pepper.
Add in chicken, red potatoes, mushrooms, carrots or anything else you like.
Wrap up tightly into oiled aluminum foil sheets. You have to wrap several times so that they won't come loose while being tossed into fire.
Next step is exactly that, toss into fire. Put it near the embers to bake for about 30-40 minutes. Check your chicken before eating.
Eat by lantern light with two kids screaming for marsh mellows....oh soo romantic!
Not really, but the packs are really yummy!
Camp food isn't so bad after all!
