Better be the best dang cheesecake I've ever eaten.

This is what I said after looking up ingredients and shopping for the cheesecakes I was making for our monthly get together. We were celebrating June birthdays (Nina, Johnah & Daddy) and I was in charge of dessert. Remember all the cool and yummy looking desserts that I've shared on here before from my talented German sister, Nina? Yeah the one that was a pastry chef in Germany? Yeah that one. And my sis and Daddy have their own line of amazing desserts! I was bound to make the celebration special and see them proud of whatever I baked. I ended up choosing cheesecake. I love them and hadn't really tried my hand at them before. I even had spring form pans unused and waiting for me to try. Now I'd only made the box instant cheesecakes before this so I was pretty sure the whole thing could be a disaster.

I had to work the day of our get together, so I decided to make them the night before. How prepared and wonderful planning on my part you say? Not really. I didn't pick out my recipes and start shopping until 7:30p.m. I never knew that cheesecakes could be soo involved. Let's just say there was too many blocks of cream cheese, eggs and cream to speak of going in these babies. Seriously, I couldn't believe it as I was creaming the ingredients together.

I ended up staying up way too late and enjoying licking the leftover mixing spoons and bowls.
I was nervous and sure they wouldn't turn out great. But by the grace of God (seriously, I prayed that I wouldn't waste money or supplies and that they could be enjoyed by everyone) they turned out pretty amazing.

Here they are in all their half eaten glory. Can you believe after all that I forgot to take pictures of them before taking them to the party?
